LinCourt Pinot Noir is bottled under the inclusive Santa Barbara County appellation in order to allow LinCourt the flexibility to source grapes from several different vineyards and microclimates in Santa Barbara County and thus enhance the wine's complexity. LinCourt acquires fruit in three major growing regions of Santa Barbara County: the Santa Maria Valley, Santa Rita Valley and the Alisos Canyon district.

The grapes for this wine are hand harvested, destemmed and placed in small open top fermenters. The cap is punched down into the fermenting musts by hand several times a day to delicately extract the colors and flavors. Following an average fermentation period of ten to fourteen days, at which point the wine has just achieved or shortly passed dryness, the wine is pressed off the skins. The wine is pumped from the press into tanks where it settles for several days before being racked to French oak barrels for aging.

The origin of oak is predominately Vosges and Allier and approximately 30 to 40 percent new oak is used for each new vintage. The wine is barrel aged for 12 to 15 months and each lot is separately racked and assembled into the determined final blend. Bottling occurs between December and March of the following year, without filtration, to preserve the wine's most complete expression of flavors and aromas.

LinCourt Pinot Noir displays cherry and berry aromas with hints of earthy truffle and spice components. The flavors are soft and rounded with a sweet, velvety texture and a lingering fruit finish.
