Taittinger Cuvée Prestige Rosé
is a superb, traditionally-styled rosé Champagne created as the sibling cuvée
to Taittinger Brut La Française. To take advantage of increasing public awareness
and appreciation of rosé Champagnes in the last decade, Cuvée Prestige Rosé was
conceived to accommodate a wider market than that for which Taittinger Comtes
de Champagne Rosé is easily accessible. Cuvée Prestige Rosé thus fills a market
niche for a rosé Champagne priced similarly to other traditional non-vintage rosés,
yet remaining in the elegant Taittinger style and representative of the exceptional
and consistent quality for which Taittinger is known.
Following harvest, the majority of grapes used in this champagne are pressed immediately
in press houses located among the vineyards, yielding a first pressing, referred
to as the "cuvée," which is followed by two more pressings, referred to as the
first and second "tailles," which are not used in the blend. In all, no more than
100 litres (approximately 26 gallons) of juice per 160 kilograms (approximately
350 pounds) of fruit may be extracted from the combined three pressings. The juice
is transported to the vinification facility, and a cool fermentation of the must
takes place under temperature controlled conditions. Taittinger Cuvée Prestige
Rosé is assembled from 45 percent Pinot Noir and 55 percent Pinot Meunier grapes,
of which 80 percent are vinified as white wine and 20 percent vinified as red
wine. The red wine vinification begins with a period of approximately ten days
during which the skins are macerated with the must to achieve color. Vinification
and aging are completed without wood contact, and blending occurs at end of the
winter, after the primary fermentation. The final cuvée is blended from an extensive
range of at least fifteen diverse crus, and usually more, of the Champagne region
and a narrow reserve of younger vintages which express the blend's fresh, lively
Pinot fruit, benefitting from Taittinger's cellar reserves of 5,000,000 bottles
to achieve consistent excellence. Thereafter the wine undergoes the secondary
fermentation in the bottle at 45 to 50 F in Taittinger's cool cellars, during
which time it acquires complexity and the fine, pinpoint bubbles characteristic
of its sparkle. Before remuage, it is aged for three to four years in Taittinger's
cellars to perfectly develop its sublime balance of fruit complexity and bouquet
before release.
Taittinger Cuvée Prestige Rosé is intense cherry-pink in color with extremely
fine, persistent pinpoint bubbles rising in delicate strands to the surface of
the wine. Its classic, aromatic Pinot fragrance of red raspberries and strawberries
is offset by elegant, subtle floral and earth nuances. On the palate, the ripe,
full berry flavors are vibrant yet refined, delicately balanced by a fresh acidity
which carries into a crisp, refreshing finish of persistent length.
